Ingredients

  • 1 pound ground beef 80/20 blend
  • 4 soft hamburger buns
  • 4 slices of sharp cheddar cheese
  • 1/2 cup mayonnaise
  • 4 slices crispy bacon finely chopped
  • 1 tablespoon whole grain mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and freshly cracked pepper to taste
  • Butter for toasting the buns

Method

  1. In a mixing bowl, whisk together the mayonnaise, chopped bacon, whole grain mustard, garlic powder, onion powder, and a sprinkle of salt and pepper. Stir until well combined and let it sit to enhance the flavors.
  2. Heat a cast-iron skillet or griddle over medium-high heat until it’s sizzling hot.
  3. Divide the ground beef into four equal portions, gently shaping them into loose balls without overworking the meat.
  4. Place the beef balls onto the hot skillet and use a spatula to press them down firmly, creating thin patties. Season generously with salt and pepper.
  5. Cook the patties for about 2-3 minutes until a nice crust forms, then flip them over. Top each patty with a slice of cheddar cheese and cook for an additional 1-2 minutes until the cheese is perfectly melted.
  6. While the burgers are cooking, spread butter on the hamburger buns and toast them on another skillet until they are golden and crispy.
  7. To assemble, spread a generous layer of the bacon aioli on the bottom half of each bun, then place the cheesy smash patty on top. Feel free to add your favorite toppings like lettuce, tomato, or pickles.
  8. Cap it off with the top bun and serve your delicious burgers right away.
