Ingredients
  

  • 2 cups cooked chicken shredded
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 8 small corn or flour tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup shredded cheese cheddar or Mexican blend
  • 1 avocado
  • 1/4 cup sour cream
  • 1 tablespoon lime juice
  • Fresh cilantro for garnish optional

Method
 

  1. In a skillet, heat the olive oil over medium heat. Add the shredded chicken and season with chili powder, cumin, garlic powder, onion powder, paprika, salt, and pepper. Stir to combine and cook for about 5-7 minutes until heated through and slightly crispy.
  2. While the chicken is cooking, prepare the avocado lime crema. In a small bowl, mash the avocado and mix in the sour cream and lime juice until smooth. Season with salt to taste.
  3. Warm the tortillas in a dry skillet or microwave until pliable.
  4. Assemble the tacos by placing a portion of the spicy chicken on each tortilla. Top with shredded lettuce, diced tomatoes, and shredded cheese.
  5. Drizzle the avocado lime crema over the top and garnish with fresh cilantro if desired.
  6. Serve immediately and enjoy!
