Ingredients
  

  • 1 pound ground turkey
  • 1/2 cup panko breadcrumbs
  • 1/4 cup finely chopped red onion
  • 1/4 cup diced green bell pepper
  • 1/4 cup sweet corn fresh or frozen
  • 1 tablespoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon crushed red pepper flakes adjust to taste
  • 1 tablespoon avocado oil
  • 4 whole grain burger buns
  • 1 ripe avocado sliced
  • 1/2 cup fresh salsa
  • Chopped cilantro for garnish optional

Method
 

  1. In a large mixing bowl, combine ground turkey, panko breadcrumbs, red onion, green bell pepper, corn, smoked paprika, cumin, onion powder, sea salt, black pepper, and crushed red pepper flakes. Mix gently with your hands.
  2. Portion the mixture into four equal parts and shape each into a thick patty, about 3/4 inch thick.
  3. Heat avocado oil in a large skillet over medium heat. Once shimmering, add the patties to the skillet.
  4. Cook the patties for about 5-6 minutes on each side, or until they reach an internal temperature of 165°F and are golden brown.
  5. While the patties cook, place the burger buns cut-side down in the skillet for 1-2 minutes until toasted and lightly browned.
  6. To serve, layer each toasted bun with a turkey patty, add avocado slices, and top with salsa. Garnish with chopped cilantro if desired.
