- Preheat your oven to 350°F (175°C).
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 1 diced onion and 2 cloves of minced garlic, stirring frequently for about 2-3 minutes until the onion is translucent and fragrant.
- Add 8 ounces of sliced mushrooms to the skillet and sauté for an additional 3-4 minutes until tender.
- Add 4 cups of fresh chopped spinach and cook for about 2 minutes until wilted. Then remove from heat.
