Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 1 diced onion and 2 cloves of minced garlic, stirring frequently for about 2-3 minutes until the onion is translucent and fragrant.
  3. Add 8 ounces of sliced mushrooms to the skillet and sauté for an additional 3-4 minutes until tender.
  4. Add 4 cups of fresh chopped spinach and cook for about 2 minutes until wilted. Then remove from heat.
  5. In a large mixing bowl, whisk together 6 large eggs and 1 cup of milk. Season with salt, black pepper, and paprika to taste.
  6. Fold the sautéed vegetables and 1 cup of shredded cheese into the egg mixture until combined.
  7. Grease an 8x8-inch baking dish and pour the mixture into it, spreading evenly.
