Step-by-Step Instructions
  1. Prepare the Dough: In a large bowl, combine flour and salt. Cut in butter until mixture resembles coarse crumbs. In a separate bowl, mix water, vinegar, and egg. Gradually add to flour mixture, stirring until a dough forms. Knead gently, wrap in plastic, and chill for at least one hour.
  2. Cook the Filling: In a skillet, heat oil over medium heat. Add chopped onion and sauté until soft. Mix in chorizo and pork, breaking it up. Add paprika, garlic, and cayenne. Cook until meat is browned. Remove from heat and let cool.
  3. Assemble the Hand Pies: Roll out the dough to 1/8-inch thick. Use a pumpkin cutter to cut shapes. Place a spoonful of filling and some cheese in the center, fold the dough over, and crimp edges. Add faces using dough scraps.
