Ingredients

For the Eyeballs
  • 16 ounces Fresh Mozzarella Balls Choose a firm variety for the perfect creamy yet stable base.
  • 1 cup Kalamata Olives Chopped olives enhance the realistic appearance of the eyeball pupils.
  • 8 slices Pepperoni Stick A firm stick is ideal for robust flavor; avoid pre-sliced for better texture.
  • 1 whole Red Bell Pepper Provides a vivid, crisp accent that mimics 'blood' around the eyeballs.
For Variations
  • 4 slices Prosciutto Swap pepperoni for prosciutto and add fresh basil for an Italian twist.
  • 8 slices Jalapeño Slices Incorporate pepper jack cheese and spicy jalapeños for a heat kick!
  • 1 cup White Cheddar & Cranberries Perfect for a festive holiday theme, turning them into 'Christmas eyeballs'.

Equipment

  • Knife
  • Cutting board
  • Airtight Container
  • Skewers

Method

Step-by-Step Instructions
  1. Prepare the Mozzarella: Gently drain the fresh mozzarella balls and pat them dry with a paper towel. Create shallow indentations on the top of each mozzarella ball to form the eye sockets.
  2. Create the Pupils: Finely chop the kalamata olives and press a piece into each indentation in the mozzarella.
  3. Prepare the Pepperoni: Cut the pepperoni stick into various sizes, including chunks and thin slices for texture.
  4. Slice the Red Bell Pepper: Wash the red bell pepper and slice it into thin wedges, to be used as fake 'blood' around the eyeballs.
  5. Assemble the Eyeballs: Assemble skewers by layering a red pepper wedge, a chunk of pepperoni, and a mozzarella ball. Seal with another mozzarella ball.
  6. Chill and Serve: Refrigerate your assembled eyeballs for at least 1-2 hours before serving to help them stay firm and fresh.
