- Prepare the Mozzarella: Gently drain the fresh mozzarella balls and pat them dry with a paper towel. Create shallow indentations on the top of each mozzarella ball to form the eye sockets.
- Create the Pupils: Finely chop the kalamata olives and press a piece into each indentation in the mozzarella.
- Prepare the Pepperoni: Cut the pepperoni stick into various sizes, including chunks and thin slices for texture.
- Slice the Red Bell Pepper: Wash the red bell pepper and slice it into thin wedges, to be used as fake 'blood' around the eyeballs.
- Assemble the Eyeballs: Assemble skewers by layering a red pepper wedge, a chunk of pepperoni, and a mozzarella ball. Seal with another mozzarella ball.
- Chill and Serve: Refrigerate your assembled eyeballs for at least 1-2 hours before serving to help them stay firm and fresh.
