- Preheat the oven to 350°F (175°C). Combine the brownie mix, eggs, and oil in a mixing bowl until smooth. Pour into a greased baking pan and bake for 25-30 minutes. Cool completely before cutting into 1-inch squares.
- Rinse and pat dry the fresh strawberries. Hull each strawberry to make threading easier.
- Assemble the kabobs by threading a brownie square, followed by a strawberry, and then a marshmallow. Repeat until the skewer is full, leaving space at the bottom.
- Melt the chocolate chips in a microwave-safe bowl in 20-second intervals, stirring in between until smooth.
- Lay the assembled kabobs on a parchment-lined tray. Drizzle melted chocolate over them or dip them in the chocolate.
- Chill the kabobs in the refrigerator for about 10-15 minutes to set the chocolate.
