Ingredients
  

  • 4 cups fresh baby spinach washed and dried
  • 2 cups strawberries hulled and sliced
  • 1/2 cup red onion thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup sliced almonds toasted
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons honey
  • 1 teaspoon Dijon mustard
  • 1 tablespoon poppy seeds
  • Salt and pepper to taste

Method
 

  1. In a small bowl, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, poppy seeds, salt, and pepper until well combined. Set aside.
  2. In a large salad bowl, combine the baby spinach, sliced strawberries, red onion, feta cheese, and toasted almonds.
  3. Drizzle the poppy seed dressing over the salad just before serving. Toss gently to combine.
  4. Serve immediately for the freshest taste.
