Method
 

Directions
  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. Toss chicken with salt, pepper, and garlic powder in a bowl to coat.
  3. Heat olive oil in a skillet over medium-high heat and brown the chicken for 4 minutes.
  4. Whisk together brown sugar, soy sauce, pineapple juice, rice vinegar, ground ginger, and cornstarch until smooth.
  5. Combine browned chicken and pineapple in the baking dish and pour the glaze over them.
  6. Cover with foil and bake for 25-30 minutes until chicken reaches 165°F (74°C).
  7. Remove foil, stir gently and bake uncovered for an additional 5-10 minutes to caramelize the glaze.
  8. Let the dish rest for 5 minutes, garnish with green onions, and serve over rice or noodles.
