- Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
- Toss chicken with salt, pepper, and garlic powder in a bowl to coat.
- Heat olive oil in a skillet over medium-high heat and brown the chicken for 4 minutes.
- Whisk together brown sugar, soy sauce, pineapple juice, rice vinegar, ground ginger, and cornstarch until smooth.
- Combine browned chicken and pineapple in the baking dish and pour the glaze over them.
- Cover with foil and bake for 25-30 minutes until chicken reaches 165°F (74°C).
- Remove foil, stir gently and bake uncovered for an additional 5-10 minutes to caramelize the glaze.
- Let the dish rest for 5 minutes, garnish with green onions, and serve over rice or noodles.
