  • 1 medium onion finely chopped
  • 3 cloves garlic minced
  • 2 cups cherry tomatoes halved
  • 1 teaspoon crushed red pepper flakes adjust to taste
For the Sauce
  • 1 cup vegetable broth or chicken broth for non-vegetarian
  • ½ cup heavy cream or coconut cream for dairy-free
  • ½ cup Parmesan cheese grated, or nutritional yeast for vegan
  • salt to taste
  • pepper to taste
For Freshness
  • 1 handful fresh basil chopped
  • 1 handful fresh parsley chopped
  • 1 whole lemon zest and juice

Method
 

Cooking Steps
  1. Heat olive oil in a large skillet over medium heat. Add finely chopped onion and sauté for 5 minutes until translucent.
  2. Add minced garlic and cook for 1-2 minutes, stirring constantly to avoid browning.
  3. Incorporate halved cherry tomatoes and crushed red pepper flakes. Cook for 4-5 minutes until tomatoes soften.
  4. Fold in drained butter beans, stirring for about 2 minutes until warmed through.
  5. Pour in vegetable broth and bring to a gentle simmer. Cook for 5 minutes.
  6. Reduce heat to low and stir in heavy cream and grated Parmesan cheese. Simmer for another 3-4 minutes until thickened.
  7. Season with salt and pepper to taste. Adjust consistency with more vegetable broth if needed.
  8. Mix in chopped fresh basil, parsley, and lemon zest and juice. Remove from heat.
  9. Plate and garnish with extra Parmesan and fresh herbs. Serve warm.
