Cooking Steps
- Heat olive oil in a large skillet over medium heat. Add finely chopped onion and sauté for 5 minutes until translucent.
- Add minced garlic and cook for 1-2 minutes, stirring constantly to avoid browning.
- Incorporate halved cherry tomatoes and crushed red pepper flakes. Cook for 4-5 minutes until tomatoes soften.
- Fold in drained butter beans, stirring for about 2 minutes until warmed through.
- Pour in vegetable broth and bring to a gentle simmer. Cook for 5 minutes.
- Reduce heat to low and stir in heavy cream and grated Parmesan cheese. Simmer for another 3-4 minutes until thickened.
- Season with salt and pepper to taste. Adjust consistency with more vegetable broth if needed.
- Mix in chopped fresh basil, parsley, and lemon zest and juice. Remove from heat.
