Method
 

Step-by-Step Instructions
  1. Heat olive oil in a large skillet over medium heat. Add chopped vegetables and sauté for 5-7 minutes until tender.
  2. In a mixing bowl, combine ricotta cheese, beaten egg, chopped herbs, and a pinch of salt until smooth.
  3. In a greased baking dish, layer marinara sauce, lasagna noodles, half of the ricotta mixture, half of the vegetables, and mozzarella cheese. Repeat layers, finishing with sauce and mozzarella.
  4. Preheat oven to 375°F (190°C). Cover lasagna with aluminum foil and bake for 30 minutes, then bake uncovered for an additional 15 minutes.
  5. Remove from oven and cool for 10 minutes before slicing. Serve warm.
