Step-by-Step Instructions
  1. In a stand mixer, combine 4 cups of all-purpose flour, 1 tablespoon of sugar, 2¼ teaspoons of instant yeast, and 1 teaspoon of salt. Pour in 1½ cups of warm milk (around 110°F) and ¼ cup of melted butter. Mix on low speed until a smooth and elastic dough forms, approximately 5-7 minutes.
  2. Transfer the dough to a lightly oiled bowl, cover it with a clean kitchen towel, and place it in a warm area. Allow it to rise for 30-60 minutes, or until it has doubled in size.
  3. Preheat your oven to 450°F and line two baking sheets with parchment paper. Once the dough has risen, gently punch it down. Divide into 12 equal pieces, rolling each into a rope about 1 inch thick and cut into 1-2 inch pieces.
  4. In a large pot, bring 4 cups of water and ¼ cup of baking soda to a vigorous boil. Add a few pretzel bites at a time, boiling for 30 seconds each. Use a slotted spoon to remove the bites, allowing excess water to drain.
  5. Whisk together 1 egg with a tablespoon of water to create the egg wash. Brush it generously over each bite and sprinkle with coarse sea salt. Bake in the preheated oven for 12-14 minutes.
