  • 1 Onion diced
  • 2 Garlic minced
  • 2 Carrots diced
  • 2 medium Potatoes for stew, diced
  • 4 cups Beef or Lamb Broth or vegetable broth
  • 1 tablespoon Guinness Stout optional
  • 2 tablespoons Tomato Paste
  • 1 teaspoon Fresh Thyme or dried thyme
  • 2 Bay Leaves remove before serving
  • 1 tablespoon Parsley for garnish
For the Mashed Potatoes
  • 2 pounds Potatoes for mashing, peeled and diced
  • ½ cup Milk or cream
  • 4 tablespoons Butter or dairy-free spread

Method
 

Step-by-Step Instructions
  1. Brown the lamb in vegetable oil over medium-high heat for 5-7 minutes until golden brown.
  2. Sauté onion and garlic in the same pot until translucent and fragrant.
  3. Combine browned lamb, carrots, potatoes, broth, Guinness (if using), tomato paste, thyme, and bay leaves in the pot.
  4. Simmer the stew, covered, on low heat for 1½ to 2 hours.
  5. Prepare mashed potatoes by boiling them until fork-tender, then mash with milk and butter.
  6. Adjust seasoning for the stew and serve hot with mashed potatoes garnished with parsley.
