Method
 

Step-by-Step Instructions
  1. Prepare Bones: Preheat oven to 400°F (200°C). Roast the bones on a baking sheet for 30 minutes.
  2. Combine Ingredients: In a large pot, add 12 cups of filtered water. Then, add roasted bones, chopped vegetables, minced garlic, herbs, and season with salt and pepper.
  3. Simmer: Bring to a boil over medium-high heat. Reduce heat to low and let simmer gently for 4 to 6 hours.
  4. Add Chicken: After 2 to 3 hours, add chicken pieces to the pot.
  5. Strain & Serve: Once simmered, turn off heat. Use a fine mesh strainer to separate solids from liquid.
