Ingredients

Fruits
  • 2 medium Red Apples Use tart varieties like Granny Smith
  • 2 large Pears Use firm pears to prevent mushiness
  • 4 medium Clementine Oranges Mandarins are a perfect substitute
  • 2 medium Kiwi Fruit Replace with green grapes if unavailable
  • 1 cup Dried Cranberries Consider raisins for a sweeter option
  • 1 cup Pomegranate Seeds Omit if unavailable, or use blueberries
Dressing
  • 1/4 cup Maple Syrup Honey can substitute
  • 1 large Lime Juice Fresh lemon juice is a great alternative

Equipment

  • mixing bowl
  • Cutting board
  • Knife
  • Whisk

Method

Preparation
  1. Wash and dry all the fruits. Dice the red apples and pears into bite-sized pieces, ensuring to leave the skin on for added texture. Peel the clementines and separate the segments while removing any seeds. Slice the kiwi into rounds and then cut them into half-moons. Combine all prepared fruits, including dried cranberries and pomegranate seeds, in a large mixing bowl.
  2. In a small bowl, whisk together the maple syrup and the lime juice. Continue whisking for about 30 seconds until the dressing is well combined and slightly thickened.
  3. Pour the lime-maple dressing over the fruit mixture in the bowl. Use a large spoon to gently toss the ingredients together, ensuring the dressing coats each piece of fruit evenly.
  4. Serve immediately in individual servings or on a large platter.
